Flavour Profile: Lightly peated
Sticky Chinese barbequed pork ribs, honey glazed ham and
sweet and sour pork stir-fry; pineapple juice, soy, brown sugar, red pepper and
spring onion – ‘it was love at first bite’. The taste had as a starter;
Prosciutto wrapped melon followed by cured salmon with maple and pink pepper
and as dessert, Limoncello cheesecake. With water, a delicate perfumed herbal
note of a lavender scented candle appeared next to smoked mussels in sweet
chilli sauce. On the palate we all now enjoyed sea bass in coconut crust and
pak choi as well as grilled salmon with citrus salsa Verde.
